Many standards have been developed within food safety: specific company standards, legal regulations, as well as standards developed by retailers. Their proliferation made their application difficult. At the same time, food safety principles have spread across the world. The safety of foodstuffs has become a major issue for all players in the food chain. A single standard with worldwide reach, and including the food safety principles, thus became necessary. ISO 22000 is a standard developed by the International Organization for Standardization dealing with food safety. This is a general derivative of ISO 22000, a technical specification on food safety requirements and guidelines.
Critical reviews of the above elements have been conducted by many scientists [1], [2], [3],.[4] Communication along the food chain is essential to ensure that all relevant food safety hazards are identified and adequately controlled at each step within the food chain. This implies communication between organizations both upstream and downstream in the food chain. Communication with customers and supplies about identified hazards and control measures will assist in clarifying customer and supplier requirements.
During hazard analysis, the organization determines the strategy to be used to ensure hazard control by combining the PRP(s), operational PRP(s) and the HACCP Plan. |
